Arkansas’s deer season is well underway with more than 120,000 deer harvested so far. Freezers across the state are filling with venison steaks, roasts and, of course, ground venison. Typically the loins and the tenderloins are the first cuts cooked up at home or camp, leaving a generous portion of ground venison at the bottom of the freezer. Wil Hafner, facility manager at Potlatch Cook’s Lake Nature Center in Casscoe, has a few tips and recipes to get more out of your ground venison.

Arkansas youth hunters take more than 9,000 deer in two-day hunt

LITTLE ROCK — According to the Arkansas Game and Fish Commission’s online harvest totals, hunters aged 6 to 15 checked 9,153 deer during the annual youth modern gun deer hunt Nov. 5-6.

JASPER — Acorn or “akern,” no matter which way you pronounce it, those little nuts falling from oaks during the 2022 Arkansas elk hunt played a pivotal role in hunters fulfilling a lifelong dream last month. According to Wes Wright, Arkansas Game and Fish Commission Elk Program coordinator, a heavy crop of acorns kept most elk in the woods and away from the traditional fields during the hunt, resulting in 26 elk during the scheduled elk season.

This also means the return of the Arkansas Game and Fish Foundation’s extremely popular Kids Zone, which will be housed in the Arts and Crafts Building of the Arkansas State Fairgrounds and will be open during the entire event.
